BACKGROUND DETAILS
From the volumes of coffee flowing out of Minas Gerais (the largest of the three major Brazilian growing regions), wehave plucked a special treat traceable to a single estate located in the protected origin of Mantiqueira de Minasregion known for its rolling hills and uneven terrain. Glaucio Carneiro Pinto produced this lot of Yellow Catuaí on hisestate called Fazenda Grota Funda, which he has owned and managed for the last 40 years. During the harvestcoffee cherries are floated to remove less dense and damaged coffee, then depulped and placed on patios to drywith the mucilage still attached to 11 percent moisture, and then carefully stored until it is time for milling and export. Preparation for export is done at the Cooperative of Coffee Growers of Vale do Rio Verde (COCARIVE), whichwas established in 1961 and currently has 660 producer-members. At the COCARIVE dry-mill, traceability andquality control are carefully managed so Glaucio can be paid according to the quality of his coffee.
